Your knives touch every plate that leaves the kitchen. Before you pick a sharpening service, ask these seven questions.

1. How often will you come?

A busy line needs sharp knives every week. A monthly service leaves you with dull knives for weeks at a time. Ask for a set day.

2. How do you sharpen?

Ask what they sharpen on. Wheels like our ceramic and fiberglass setup grind a real edge. Pull-through gadgets and quick touch-ups don't last a shift.

3. Do I keep my knives, or do you swap them?

Swap services leave sharp knives and take dull ones. On-site sharpening keeps your own knives. Good services offer both. See the comparison.

4. What does it cost, really?

Get the per-visit price, the per-knife price over the base count and any fuel or trip charge in writing. Ours are on our restaurant page.

5. Is there a long contract?

Some national services lock kitchens into long contracts. Ask how to cancel before you sign.

6. What else can you bring?

If the sharpener already stops every week, they can bring gloves, trash liners, foil and film too. That's one fewer vendor and one fewer invoice.

7. Are you local?
